Hi

How many of you eat rice? Enjoy it for almost every meal? Well, my family loves rice. It is one of main protein. Saying that does not mean it is every day. We use many sources of protein.

Let's learn a little about rice, yes? Where does it come from? How do we get rice.

Did you know:
¿Sabías que:
Rice originated in the valley region of China about 8,200 -13, 500. From East Asia, rice spread to Southeast and South Asia. Rice was introduced to Europe through Western Asia, and then to the Americas through European colonization. There are many different kinds of rice and many ways to cook it depending on the region. In some areas for example, Far East or Spain, there is a preference for softer stickier varieties.

Rice grows easily in your backyard, in a garden bed or in buckets, given the right amount of soil, water and other nutrients. Short-grain, medium-grain and long-grain rice thrive in wet conditions, specifically standing puddles of water or swamp-like conditions. Once the rice grains develop, the water in which they grow must drain so that you can harvest and mill the crop. After the harvesting and milling processes, you can eat the rice. Wikihow

Wikihow

After the  first milling process we have brown rice, that is, after using a rice huller  is to remove the chaff (the outer husks of the grain). As the milling continues, our next product is white rice, that is, removing the bran, i.e., the rest of the husk and the germ. Have you ever seen the rice in the husk? I have, glad I did so I know what it is.

White rice, which keeps longer, lacks some important nutrient. In a limited diet which does not supplement the rice, brown rice helps to prevent the disease beriberi.

Rice is a good source of protein and a staple food in many parts of the world, but it is not a complete protein: it does not contain all of the essential amino acids in sufficient amounts for good health, and should be combined with other sources of protein, such as nuts, seeds, beans, fish, or meat. Talking about rice makes me hungry for some rice. Everyone in my family enjoys rice by itself or with something else to complete the meal. I enjoy eating rice and scrambled eggs with tomato sauce. It is nice with some beans but it is also nice without. Sometimes the beans makes the meal goes a long way with a big family.

I was also able to gather some recipes and try it at home. It was lovely so I have the joy of sharing with you all. I know there are several lovely Dominicans who will know by looking if it is done well. Great to learn about other culture and food.

Here is my version of the recipe:
Rice with Pigeon Peas

Ingredients

1 pound dried pigeon peas, rinsed
2 bay leaves
1/4 cup oil
1 medium white onion, diced
2 garlic cloves, minced
1 green bell pepper, diced
1/2 cup chicken broth
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon cayenne
2 cups long-grain rice
1/2 lime, juiced
1 tablespoon salt

Method

Put the pigeon peas and bay leaves in a large pot, cover with 3 quarts of cold water, and place over medium heat. Cover and cook the beans until tender, about 1 1/2 hours. Check the water periodically; add more, if necessary, to keep the peas covered. Drain the pigeon peas and reserve 4 cups of the cooking liquid. Preheat the oven to 350 degrees F. Coat a large Dutch oven or other ovenproof pot with  oil and place over medium heat. When the oil is hot, add the onion, garlic, and peppers. Cook, stirring, for 10 minutes, until the vegetables have softened, without letting them brown. Pour in the chicken broth and continue to cook until the liquid is evaporated. Stir in the cumin, coriander, and cayenne. Mix in the rice and reserved pigeon peas. Pour in the reserved 4 cups of pigeon pea cooking liquid, lime juice, and salt; stir everything together. Cover and bake for 20 to 30 minutes, until the rice is tender and the liquid is absorbed.

Methodo
