Holiday Cake for Gluten free Lovers, #Scrumptious

Hello,

As the holidays comes around, we sometimes forget about those who have allergies or who needs gluten free food. I have several close friends who are gluten free and are concern with what they are eating. I am aware some of the food we eat when we visit the family are not as great as when we cook at home but for manners sake as my children say,"We eat them since it is one day!"

I feel happy when my visitors and/or my guest enjoy what I make for them and the main reason I go out of my way to cater to each individual as if they were my children. I give the food they are able to eat. Sometimes I notice that the other guest eating the food and they enjoy. What can I do, just make enough for all to enjoy but I do let them know what they are eating. There are times that others do not realize what they should eat. It is nice to know what we are eating and let others feel special even if they have special needs. I hope you all create special memories with family and friends. Gluten-Free Chocolate Frangipane Tart

Ingredients

Crust:
1 1/4 cups ground almonds
1/3 cup confectioners' sugar
1/4 cup light brown sugar
1/3 cup Dutch-process cocoa powder
1/2 teaspoon fine salt
1/4 teaspoon baking soda
6 tablespoons cold unsalted butter, in pieces

Filling:
4 eggs
2 sticks unsalted butter, at room temperature
1 cup granulated sugar
1 cup ground almonds
7 ounces bittersweet chocolate, melted and cooled
1/3 cup dried black mission figs, halved (5 to 6 figs)
Creme fraiche, for serving, optional

Directions

1. For the crust: Pulse together the ground almonds, confectioners' sugar, brown sugar, cocoa, salt, and baking soda in a food processor. Add the butter and pulse until the dough just begins to come together, but is not sticky or wet, about 10 pulses. Remove the blade and turn the dough out into a 10-inch tart pan with removable bottom. Carefully press the dough evenly into the bottom and up the sides of the pan. Refrigerate at least 15 minutes. Preheat the oven to 400 degrees F.

2. For the filling: Separate the eggs and whip the whites until they just hold stiff peaks. In a separate bowl, cream the butter and sugar. Add the egg yolks one at a time and mix until smooth. Stir in the almonds and melted chocolate. Gently fold in the egg whites. Spoon into the chilled crust.

3. Bake until the chocolate just starts to set, 15 minutes. Press the figs gently into the filling in a circle around the tart and continue baking until slightly puffed and set throughout, 20 to 25 minutes. Cool. Cut and serve with creme fraiche, if desired.

#Grilled Chicken Kebobs for the weekend

Hi All,

How is the weekend going? Are you cleaning house? Are you doing the shopping, groceries, gifts? I know as a parent there list is enlist with all the holidays coming up. Mom, let's do a quick lunch or dinner this weekend. Let's get a breath of fresh air before we start cooking. lol

We all know that the colors of our food tells how healthy we are by what we eat, is that so? The more colors of food we eat the better health we would be, the greens are full of vitamins B which is very important for the young ladies that do not eat meat.

Grilled Chicken Kabobs

1 pack chicken breast cut in chunks
1 pack or pound of sweet pepper cut in chunks
1 lb onions cut in large chunks
1 pack mushrooms
1 pack long skewers

Method

Cut all ingredients in large chunks, and place each onto the long skewer. I normally cook for at least 8 minutes in the oven as I like my chicken cooked properly. Heat the grill and place the skewers to grill til done to your taste. I enjoy doing grilled shrimp which takes less time to cook. Which is your preference to grill?

Brochetas de pollo a la parrilla
Ingredientes

Hey, if outside is too cold for you at this time, you can grill inside in the oven. It really depends on the chunk size of the meat or it will be under cook. Enjoy!

¡ Disfrute!

A nice side dish for the #BBQ in the #Fall

Oh my dear readers,
Oh, mis queridos lectores,

I sure hope everyone is enjoying these so beautiful days of Fall. I must admit these days in Miami has made a real drastic change. It is such a delight to wake up to the cool morning, the afternoon gets a bit hot but my day feel energized. The frisky morning gives me life!

On the weekends, it makes me still think of delicious barbecue ribs and chicken. So I might as well get into the mood and do my own and perhaps see where it leads to. I am still doing some shopping to
get my place to feel like a home as I need some accessories and make some changes as babies are going and now ready for the changes of lifestyle.

Now, let's learn why we should add greens to our table. Adding some benefits of eating cilantro which is great to add to your diet. Cilantro has fiber, Vitamin K,Vitamin A, Riboflavin & Folate. Let me encourage you a bit more;).
What is Fiber? It promotes regularity meaning that fiber helps fill you up and reduces cholesterol. Wait, listen up, this herb has loads of vitamins worth eating. It is also a plus for diabetics because it keeps blood-sugar levels stable, my grandmother mentioned this but never thought of it before, hm.  This is something I remembered being told after my one of my surgery. I was given a cilantro sauce since it has Vitamin K which is essential for blood clotting but it also plays a role in bone strength as you age. Important: Freezing cilantro will decrease the vitamin K value, but heating it will have no effect, did you know that? But wait there is more, Vitamin A is important for good vision, fetal development and cell reproduction. It is also an antioxidant, which boosts the immune system. Cilantro has a moderately high amount of Riboflavin & Folate: Fantastic! It helps produce sex hormones, strengthen bones, metabolize fat and carbohydrate, and absorb calcium found in Manganese. Do you feel the need to eat cilantro?

Ok, here goes my recipe:

Bien, aquí tienes la receta:

You can also do this and make a nice fry egg and add for a quick dinner with flour tortillas! It is easy and delicious, add a sausage and the kids will love it! Try it and let me know what is the result, enjoy!!!!

A side dish with colors of the season, what is your favorite for #FALL?

Hello,

How are you and the family doing? Hope all is well and enjoy the best of the weather and good health. Are you enjoying all the vegetables with wonderful colors? Each is very important in our diet. How many colors do you eat for the day?

How do you get energized? What do you eat? Do you eat some sugar or do you eat something delicious and healthy. What type of veggies are your favorite? I enjoy the lovely weather and enjoy the fabulous colors of the season: tomatoes, onions and avocados.

My dad used to tell me that an onion a day is just as good as an apple a day. Onions are great for women after menopause as it is good for the bone. It is also good to prevent cancer. It is not a favorite as it has an after smell but the health benefits are excellent.

I can remember one day, there was a super bump on one of my brother's leg and my dad sliced a tomato and wrapped it around my brother's leg for the day. Whatever happened, we were just amazed that at the end of the day, the leg was no longer swollen. Tomato is also one of the world's healthiest food, were you aware of that fact? It is filled with vitamin C and good for the heart, cancer and Alzheimer's disease. These are just a few good benefits. One important factor, tomato is not a vegetable but a citrus fruit.

Hm- avocado, the green fruit it is not a vegetable is really a superfood. It is filled with vitamins A, C, E, K and B6, along with an enormous amount of potassium and “healthy” fat. One factor I am aware of is that adding avocado to other food can improve your absorption of nutrients. It is good to reduce the signs of aging and eye health. This has many health benefits and is great in many desserts: ice cream and cake.

Sharing my side dish with colors of the season:

Avocado Bruschetta
Ingredients:

1 pitted avocado diced
1 small onion minced
2 can tomato or
2 large tomato roasted
2 lemon juice
1 tsp brown sugar
Season to taste
Olive oil

Method

Pit the avocado and diced. Place in dish. Minced onion and add to the dish.  You can use a large can of tomato. I use 2 large tomato. I wash and then add to a pot to roast or a comal. It really depends on the type of stove this is easy to do:). After roasting, you can blend and add to the dish with remaining ingredients. Add lemon juice, olive oil, salt and sugar to lessen the citric taste. Mix everything together and it is ready to add to any dish. Try it and let me know what you think? Enjoy!

¡ Disfrute!

Awesome meal filled with Iron or Vitamins B

Hello All,

I certainly hope all of you have been keeping hydrated and eating well as we are back to school and ready for the school year. Have you all met your classroom teachers? Have you had the welcome back meeting? I hope you have some awesome teachers this year. I have met the teachers and looking forward to the welcome back event.

With all those summer activities and school events prepping up, we need to get our source of energy and nothing better than some real home made food. Here is a meal (stew black beans, sliced beets and fry fish)that I enjoyed this past summer and surely will enjoy as we prepared for the new school year. We need to look at the food (vegetable and fruits)that are high in Vitamin B or Iron as we may otherwise know it. Remember that the bright colors are the best choices. Do you eat beets? How do you like it? I like it in smoothies as well as cooked, thinly sliced with lemon, salt and pepper. Yummy!

Another that is filled with vitamins is the black beans. I know that black beans is staple food of many Central American countries. Many doctors encourage their patient to eat black beans as a source of vitamins to replenish the resource of blood. Most women needs to eat staple food (fruits and fruits) to increase their flow of blood monthly. Many type of beans especially black beans in particular can be found in most local store around the world.

There are many more fruits and vegetables that are eaten to replenish our blood flow which is vital for our body to function well. What is your main source of food that you like to replenish your blood flow besides tonic that is bought at the local store or drugstore?

This post may contain affiliate links. Please read the Privacy and Disclosures statements.

Hello,

Hope you are all having a great week and enjoying the family and the back to school routine. I certainly need all the help to make the lunch routine very exciting and different. How do you make lunch more fun for the kids?

Here I am sharing a recipe that you can make a day before and give to the children for lunch with their favorites vegetables and Jennie-O Turkey Bacon. This recipe can be served hot or cold, can be served as a snack or with fries. Enjoy!

¡ Disfrute!

Vegetable Quiche with Jennie-O Turkey Bacon

Ingredients:

4 slices Jennie-O turkey bacon
1/2 cup onions minced
1 cup button mushrooms, minced
2 carrots, grated

2 large potatoes, grated
1 teaspoon dried oregano
½ teaspoon salt
1 crushed garlic clove

3 eggs, beaten
½ cup milk
200g cheddar + mozzarella cheese, grated

1/4 cup flour

Method
Melt a tablespoon of Pompeian extra light olive-oil over a high heat in a large fry pan. Saute the onions for a couple of minutes, add the mushrooms and fry until slightly browned. Next, add the grated carrots and potatoes. Put the lid on the fry pan and reduce the temperature. Add a couple drops of water and allow the steam and natural vegetable liquids to soften the vegetables.
Once the vegetables are softened, add oregano, salt and crushed garlic.  Leave to steam for another couple of minutes then turn off the heat.
In a mixing bowl beat the eggs, milk and cheddar and mozzarella cheese together. Then add the cooked vegetables and stir until well mixed.
Grease a pyrex dish with butter and then with in bit of flour. This helps to form a “crust” on the bottom of quiche if you do not want a full pie crust.  Pour in the egg and vegetable mix and smooth out the surface. Bake in an oven preheated to 320 degrees for 30 minutes, until golden brown and set.
Serve hot or cold with a side salad. This can be serve as a snack or as a meal. It is great for a picnic.

Jennie-O Grilling Flavors : All Natural Turkey Franks, Delicioso!

Hey all,

How are you all doing? Well, it has been hectic on my end and trying to get some healthy while quick food on the table during these long days of summer. Well, I received some really delicious Jennie-O All Natural Turkey Franks. I was thinking on a nice summer day to have some nice  grill hot dogs but then the kids asked for a flavorful lentils soup, so went my happy way and then I decided to add the Jennie-O All Natural Turkey Franks.

Lentils Soup with Natural Turkey Franks

Ingredients
  • 1 pack Natural Turkey Franks
  • 1 pack  Jalapeño Jack Turkey Franks
  • Olive Oil
  • 1 Medium Onion (minced)
  • 2 Stalks Celery (diced)
  • 2 Medium Carrots (diced)
  • 2 Cloves Garlic (minced)
  • Salt
  • 1¼ Cups Lentils (brown or green)
  • 2 Bay Leaves
  • 1 14½ Ounce Can Diced Tomatoes
  • 6 Cups vegetable Broth (could also use other flavor broth)
Method
Saute onions for 5-7 minutes or until it begin to soften, then add the lentils to the pan.
Stir everything, add onions, celery, carrots, garlic, a good pinch of salt to the pan and stir well together. Add the bay leaves, tomatoes and broth and bring everything to a boil.
Once it's boiling, reduce to a simmer and cook for 40 minutes.
If you like your lentils softer, you can cook the soup longer. In the last minute of cooking I add the Turkey Franks and Jalapeño Jacks to give it flavor. Remove from heat, top with chopped onions and parsley, serve.
Note: Upon you are reheating you may need to stir in some water to get a more soup-like consistency. It is certainly nicer and with more flavor after a day. Enjoy this delicious dish! It is a summer favorite in our family. What is your family's favorite?

1 onza 14 puede dados tomates
Vegetales 6 tazas caldo (podría también utilizar otro caldo sabor)

My beautiful story is all gone in the split of a second. So how was the first weekend of school break? Very hectic I can just imagine. Well, hope everything turns out well and the children are at their favorite campsite where it is safe and secure. We pray all goes safely and returns home safely.

Delicious Mexican tomato Sauce for any dish

      Hello All,

How are you all doing? Hope the first week of school break is a beautiful reunion of the family before summer camps begin. Be safe and enjoy, family moments are precious!

Here is one of the most delicious Mexican tomato sauce made with fresh vegetables and spices for your table and blends with most home-made food and compliments the tacos, quesadillas, burritos, refried beans on garnaches and many more snacks, breakfast and meals.

I can remember the smell of roasted tomato and onions many days when my grandmother was doing lunch. It is a beautiful memory of the tomato being roasted on a handmade fire-hearth. It really give that extra zing to the flavor. I do it in one of the little iron skillet, it gives a nice flavor. The skin begins to break as it is toasted or roasted.

      Mexican Sauce

      1 ripe tomato
      1 bunch of cilantro (minced)
      1/2 onion diced
      1 clove garlic
      Season to taste

      Method

Put the tomato in a boil a pot of water for approximately 15 minutes. Cool and then, you can either use a kitchen mortar and pestle to crush the tomatoes. Wash the cilantro and minced to add to the tomatoes. Add the diced onions to the mixture. Mixed well and place in a container for future use. Add spices of your choice.

      Salsa Mexicana

      1 tomate maduro
      1 manojo de cilantro (picado)
      1/2 cebolla picada
      1 diente de ajo
      Condimento a gusto
