#Menu ~~> Rice n Beans, Baked Chicken and Cold slaw~> #Delish #Fresh #Healthy

Hey all,

How's the summer grilling or cooking coming along? We have been very busy and sometimes being out we end up eating out. When we get the chance to eat home, we enjoy it all and have a great homemade meal!

¿Cómo es el verano o asado bbq o cocinando? Hemos estado muy ocupados y a veces nos terminan comiendo afuera en los restaurantes. Cuando tengamos la oportunidad de comer en casa, lo disfrutamos todos y aprovechamos de una gran comida casera!


Here is our scrumptious meal with baked chicken, rice and beans, cole slaw and a little bit more veggies. In a previous post, I ave you my version of rice and beans recipe. Today, I will share with you my version of coleslaw.

Aquí está nuestro delicioso pollo al horno con harina, arroz y frijoles, ensalada de repollo y un poco más verduras. En un post anterior, le he dado mi versión de receta de arroz con frijoles. Hoy, voy a compartir con ustedes mi versión de repollo.

Ingredients
Cole Slaw

1 lb carrots grated finely
3/4 cabbage grated or chopped thinly
1/2 onions grated
1 pack 8 oz raisins (optional)
1/2 cup mayonnaise
1/4 yogurt natural
3/4 tsp sugar (optional)
1 tsp vinegar (white, cider)
splash vinegar (apple, malt or white are fine)

Method
Mix it all together thoroughly!
It is crispy on the first day, the vinegar softens the vegetables by the 2nd day, will stay fresh for a good few days in the fridge. I grew up with this stuff and force all my German kin to eat it at BBQs now. pinch paprika
few grinds pepper

I put all together and mix thoroughly. Season as per your taste. This goes well with bbq, salads, sandwiches. I enjoy this as a snack as well with less mayonnaise. Hope you enjoy as much as we do!

Ingredientes
Ensalada de col

1 libra de zanahorias ralladas finamente
3/4 repollo rallado o picado fino 1/2 cebollas ralladas 1 paquete de 8 onzas de pasas (opcional) 1/2 taza de mayonesa 1/4 yogurt natural
3/4 cucharadita de azúcar (opcional)
1 cucharadita de vinagre (blanco, sidra)


Metodo
Pongo todo junto y mezclar bien. Temporada según su gusto. Este va bien con barbacoa, ensaladas y sándwiches. Me gusta este como un aperitivo con menos mayonesa. Espero que disfrutes tanto como nosotros!!
