Hola a todos!





Having a great week? Sure hope you all are! I must give thanks for great friends that we encounter along the way as we go life way! We give thanks for our blessings of meeting beautiful people along the way, some we keep in touch and some comes by for a reason. They are all blessings!

Lo estan pasando de maravilla? Espero que todos ustedes lo estan pasando de lo mejor! Debo dar gracias por grandes amigos que encontramos en el camino! Damos gracias por nuestras bendiciones de conocer a gente hermosa en el camino, algunos nos mantengamos en contacto y algunos llegan y pasan por una razón. 

Some weeks ago, some friends and I decided to meet up and have a great time for lunch. We used to do that quite a bit but life has changed our path and it is not as often as we would like to. It is so nice to meet, chat and have a good laugh at the things that happens in  our life. It is funny how people from different countries meet up and enjoy the difference in culture and learn from them. Isn't that wonderful!

Hace algunas semanas, algunos amigos y yo decidimos encontrarse y divertirse para el almuerzo. Solíamos hacer esto completamente un poco pero la vida ha cambiado nuestro camino y no es tan a menudo como nos gustaría. Es tan agradable encontrarse, charlar y tener una risa buena en las cosas que pasa en nuestra vida. Es gracioso cómo la gente de países diferentes se encuentra y disfruta de la diferencia en la cultura y aprende de ellos. ¡No es tan maravilloso!




After a busy morning, we met at a great Pizzeria: Spizzigo in the Doral area. The service was great, the waiter/waitress was very attentive. Our drinks were refilled almost immediately. The wait for the food did not seem very long since we were busy chatting with each other catching up with yesterday's issues. It is always so beautiful to hear the wonderful events that happens in each others' lives. Friendship is beautiful, it always feels like we saw each other yesterday and we just fill in what we missed and it goes on til we meet again. The atmosphere were lovely.

Después de una mañana ocupada, nos encontramos en una gran pizzería en la zona de Doral. El servicio era genial, el camarero/camarera fue muy atenta. Nuestras bebidas fueron rellenados casi de inmediato. La espera por la comida no parecía muy larga ya que estábamos ocupados charlando con los demás ponerse al día con temas de ayer. Siempre es tan hermoso escuchar los eventos maravillosos que ocurre en nuestras vidas. La amistad es hermosa, siempre se siente como si nos vimos ayer y compratimos sólo en lo que perdimos y continúa hasta que nos volvamos a ver.






The pizza was a beautiful sight to see. It was not the usual pizza, it was with nuts and honey. It was super  delicious. It sure was a great change and a taste worth waiting for.  Quite memorable as the time we spent together!

La pizza era una vista hermosa para ver. No era la pizza habitual, era con nueces y miel. Era súper delicioso. Seguro era un gran cambio y un gusto que vale la pena esperar. ¡Completamente memorable como el tiempo que pasamos juntos!


The salad was really superb, with nuts, fruits and a variety of greens. It is quite delectable and exceptional. I enjoyed the blend of the greens with the fruits, nuts and chicken. Great mixture with the balsamic sauce!

La ensalada era realmente magnífica, con nueces, frutas y una variedad de Verdes. Es completamente delicioso y excepcional. Disfruté de la mezcla de los Verdes con las frutas, nueces y pollo. ¡Gran mezcla con aliño balsámico!!

Arroz con Gandules con Pollo horneado #Dominicana #Casera #Saludable

This past week we had lots of fun and must say "thanks" for the wonderful church family who are great companions to celebrate with. It is always great to give praise and enjoy great company. It is great to share LOVE!

Esto la semana pasada teníamos mucha diversión y debemos decir 'gracias' por la maravillosa familia de la iglesia quienes son grandes compañeros para divertirse con. Siempre es estupendo dar la alabanza y disfrutar de la gran compañía. ¡Es estupendo compartir el AMOR!

I was also able to gather some recipes and try it at home. It was lovely so I have the joy of sharing with you all. I know there are several lovely Dominicans who will know by looking if it is done well. Great to learn about other culture and food.

También pude reunir algunas recetas y probarlo en casa. Era precioso para tener la alegría de compartir con todos vosotros. Sé que hay varios dominicanos encantadoras que sabrán si se hace bien. Ideal para conocer otra cultura y comida.

Here is my version of the recipe:
Rice with Pigeon Peas    

Ingredients

1 pound dried pigeon peas, rinsed
2 bay leaves
1/4 cup oil
1 medium white onion, diced
2 garlic cloves, minced
1 green bell pepper, diced
1/2 cup chicken broth
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon cayenne
2 cups long-grain rice
1/2 lime, juiced
1 tablespoon salt

Method

Put the pigeon peas and bay leaves in a large pot, cover with 3 quarts of cold water, and place over medium heat. Cover and cook the beans until tender, about 1 1/2 hours. Check the water periodically; add more, if necessary, to keep the peas covered. Drain the pigeon peas and reserve 4 cups of the cooking liquid. Preheat the oven to 350 degrees F. Coat a large Dutch oven or other ovenproof pot with  oil and place over medium heat. When the oil is hot, add the onion, garlic, and peppers. Cook, stirring, for 10 minutes, until the vegetables have softened, without letting them brown. Pour in the chicken broth and continue to cook until the liquid is evaporated. Stir in the cumin, coriander, and cayenne. Mix in the rice and reserved pigeon peas. Pour in the reserved 4 cups of pigeon pea cooking liquid, lime juice, and salt; stir everything together. Cover and bake for 20 to 30 minutes, until the rice is tender and the liquid is absorbed.




Arroz con Gandules

Ingredientes
1 Libra gandules 
seca, enjuagarse
2 hojas de laurel
1/4 taza de aceite
1 cebolla blanca mediana, cortada en cubos
2 dientes de ajo, picados
1 pimiento verde, picado
1/2 taza de caldo de pollo
1/2 cucharadita de comino molido
1/2 cucharadita de cilantro
1/2 cucharadita de pimienta
2 tazas de arroz 
1/2 limón, jugo
1 cucharada de sal


Methodo

Ponga los gandules y hojas de laurel en una olla grande, cubre con agua fría y sobre fuego medio. Cubre y cocine los frijoles hasta que estén tiernas, por 1 1/2 horas. Fijase del agua; agregar más, si fuera necesario, para mantener los guisantes cubierto. Escurra los gandules y reservar 4 tazas del líquido de cocción. Precalentar el horno a 350 grados f el. cubri una olla grande u otro olla con aceite y lugar sobre fuego medio. Cuando el aceite esté caliente, añadi la cebolla, ajo y pimientos. Cocine, revolviendo, durante 10 minutos, hasta que las verduras estén blandas, sin permitirles marrón. Verte el caldo de pollo y continua la cocción hasta que el líquido se evapora. Agregue el comino, cilantro y pimienta. Mezcle el arroz y reservados gandules. Vierta las reservado 4 tazas de  líquido, jugo de limón y la sal; Revuelva todo junto. Cubrir y hornear de 20 a 30 minutos, hasta que el arroz esté tierno y el líquido se absorba. 

I made some baked chicken and a small salad. Everyone enjoyed. Enjoy!

Hice el pollo al horno y una pequeña ensalada. Todos disfrutaron. ¡ Buen provecho!

Pancit - Filipino's traditional food - Comida tradicional de los Filipinos #meal

It is that time of the year where everyone is happy and try to make at least one new resolution.

Es ese tiempo del año donde cada uno es feliz e intento de hacer al menos una nueva resolución.




For most Filipino festivities, you can find Pancit, one of their favorite food. This is one of their staple food in the Philippines, the ingredients varies based on what part of the Philippines you are from. Here in the USA, it is done for special occasion.

Para la mayoría filipinos fiestas, usted puede encontrar Pancit, uno de sus alimentos favoritos. Este es uno de sus alimentos básicos en las Filipinas, que varía en función de qué parte de Filipinas. Aquí en los Estados Unidos, que se realiza para ocasiones especiales.

I have had the pleasure of eating this main food many times and it is always delicious. I enjoy eating it so much, I had to ask for the recipe as my family also like the vegetarian version. I will indulge and make it as the Filipinos make it.

Tuve el placer de comer esta comida principal muchas veces y siempre es delicioso. Disfruto de comerlo tanto, tuve que pedir la receta porque mi familia también le gusta la versión vegetariana. Complaceré y lo haré ya que Filipinos lo hacen.

Pancit
Ingredients:

1 cup Rice flour  (rice noodle or rice sticks)
2 Carrots (sliced thinly)
1/2 Cabbage (thinly sliced)
1 sml onion
1 garlic
1 cup Shrimp
1 cup Chicken

Method:

Soak pasta sticks for 10 mins in a bowl. Drain water and leave for later. Boil chicken til cook, shred chicken. Saute the carrots, onions, garlic, cabbage in olive oil. Add Shrimp for 5 minutes. Cook Noodle with little oil, kept stirring. Stir in little water from chicken and cook for 20 mins. Stir in soy sauce cover simmer over slow heat 5 mins. Stir in all other ingredients.



Pancit
Ingredientes:

1 taza (fideo de arroz)
2 zanahoria (cortado degadito)
1/2 repollo (cotado delgadito)
1 cebolla pequeña
1 ajo
1 taza de camarones
1 taza de pollo

Metodo:

Remoje palos de pasta durante 10 minutos en un recipiente. Drene el agua y dejar para más adelante.  Herve el pollo hasta cocido, pica pollo. Saltear las zanahorias, cebolla, ajo, repollo en aceite de oliva. Añada el camarón durante 5 minutos. Cocine al Fideo con poco (aceite), con cuidado moviendo al fideo.. Agregue un poco de agua del pollo y cocine el fideo durante 20 minutos. Revuelo en cubierta de salsa de soya, hierva sobre fuego lento 5 minutos. Agregue los demás ingredientes. Hecha y a comer!!!
