Chile con Carne #Delicious #Enjoyable #Delish #BeansHealthy

Hello all,

I hope you all had a wonderful and blessed weekend. I sure had a rather busy one with several blessed gatherings for which I am "Thankful." Hope yours was just as beautiful!

Here we had a rather quick lunch over the weekend which we enjoyed and hope  you will enjoy just as much. This is rather quick as we normally have some form  protein. Ours is the rich superfood: beans. We enjoy beans in any shape or form. Beans and legumes are the most economical and a common food all over the world. These are typically high in fiber, calcium, and iron, beans and legumes are also a great source of protein.

Sharing some interesting information with you. Did you know that a cup of  Boiled Black Beans (Frijoles Negros) is 227 calories and a cup of  Boiled Kidney Beans is 225 calories. To find out about other types have a  look at Health·Alicious·Ness .com webpage.

As I was saying, we normally have some type of beans. So I would need something to add and this weekend I made myself some Chile con Carne. It has been a while and it was delicious.

3 tbsp tomato puree
1 tsp cinnamon
1 bay leaf

1 can kidney beans or 2 cups home-cooked beans
Salt
Handful of chives, chopped
1 pk sour cream
2 cups rice

Method
Saute the onion, garlic, chilli and thyme in 2 tablespoons oil in a large saucepan. Next brown the mince in a separate pan over moderate heat in a little oil. Add the dried spices to the onion mixture and cook until they release their aroma. Then stir in the beef and mix well. Add the tomatoes and leave to cook for about 4 - 5 minutes. Pour in the stock and stir in tomato puree to taste. Drop the cinnamon and bay leaf, bring to the boil and leave to simmer.

As soon as the sauce is beginning to thicken, add the kidney beans and leave to cook for another 5-10 minutes. Check to taste. Stir in the chives with sour cream. Spoon the chilli onto the center of rice, add the sour cream and chives on top.

    1. Hi Sny,

Yes I am sure it would do well in a slow cooker but it does not take long if you have the beans done:)
