¿Cómo están haciendo hoy?

Well, been a while since I had made some nice belizean breakfast and some said "Can we have some fry jacks?" So I got out my ingredients and then I thought, "Let's have a great belizean breakfast!" Well, that means more flour and guess what I will share my recipe with you.

Pues bien, desde hace un tiempo me había hecho algunos buenos desayuno beliceños caliente y algunos dijo: "podemos tener algunos tortas fritas?" Entonces bajé mis ingredientes y después pensé, "vamos a tener una gran  desayuno beliceño!" Eso significa más harina y supongo que voy a compartir  mi receta con ustedes . 

This recipe is another Belizean favorite. It is sort of a biscuit and a muffin. This is something that Belizeans would eat for breakfast, lunch and dinner. For breakfast we have them with refried beans, red, black or pinto beans, melted cheese and scrambled eggs, or simply ham and cheese.

Esta receta es otra de las favoritas de Belice. Es una especie de galleta y un muffin. Esto es algo que los belicenses que comer para el desayuno, el almuerzo y la cena. Para el desayuno, nos tienen con frijoles refritos, rojo, negro o frijoles, queso derretido y huevos revueltos, o simplemente jamón y queso.

This can be served for lunch with some nice stewed chicken and cold slaw with johnny cakes.

There are many ways to make Johnny cakes, I will give you my version but you can always modify the recipe to your taste.

Hay muchas maneras de hacer tartas johnny, le doy mi versión pero siempre se puede modificar la receta a tu gusto.

Johnny Cake


4 cups all purpose flour
1/3 -1/2 cup either butter, shortening, lard, margarine
1/4 cup coconut oil
1 tsp salt
6 tsp baking powder
3/4 – 1 1/2 cup coconut milk or water


Sift flour, baking powder and salt in a bowl. Add butter, shortening or coconut oil, mix well. Use two forks to cut in the shortening or butter into the flour. Add the coconut milk gradually to form a dough.  Roll out into small balls, flatten slightly and prick with a fork. Leave for a short while and  then bake in a hot oven 375°F for 15-20 mins. Slice and butter while hot and enjoy. Makes about 12 -14. Varies depends on your size.

Johnny Cake 


4 Tazas de harina normal 
1/3 -1/2 Taza o mantequilla, manteca, margarina 
1/4 De taza de aceite de coco 
1 Cucharadita de sal 
6 Cucharadita polvo de hornear 
3/4 - 1 1/2 taza leche de coco o de agua 


Cernir la harina, el polvo de hornear y la sal en un 
tazón.  Añada la mantequilla, manteca o aceite de coco, y mezcle todo bien. Utilice dos tenedores para cortar la manteca o mantequilla en la harina. Añadir la leche de coco gradualmente hasta formar una masa. Estira  pequeñas bolitas y aplanar ligeramente y pincha con un tenedor. Dejar durante un breve espacio de tiempo y, a continuación, cocer en el horno caliente 375 °F durante 15 a 20 minutos. Corte y ponga mantequilla y a disfrutar. Hace unos 12 a 14 años. Varía depende de su tamaño.
