Carrot and Sweet Corn Rice

Hello Hello one and all; Hope you all had a wonderful weekend with your love ones. It was a long tiresome weekend but very joyful reunion with family and friends since we were away on vacation. It was quite an adventure but it is always nice to be missed :). After looking at many recipes I was longing for something a bit spicy- would be good! I decided to change my menu and try one of Sejal Popat's Recipe at https://mytastydishes.co.uk. The measurements were not available but I tried it and was nice. I will have to try again as I did not put enough spice as I was afraid it was gonna be too spicy and would not be able to eat it. It is better to have less salt than too much, it cannot be salvaged,lol! I did not take any measurements either as I was using my tastebud. I have a bit of left overs so I will spice it up a bit and the rice certainly will be exquisite as the day after food has obsorbed the spice and is nicer.


  Method

Take the oil in a non stick wok and add the cumin. Once the cumin starts to sizzle, add the cinnamon, cloves and onions. Let the onions turn a golden colour. Meanwhile, peel the carrots and cut long ways in two. Cut each one into fine slices. Add the carrots and sweet corn to the onions. Let this cook until the carrots are soft but do not overcook. Add the turmeric and garam masala. Cook for a few minutes. Add the rice and salt. Give this a gentle stir until all the spices have mixed well with the rice. Check for salt. Serve hot!
