Vegetable Rice, Eggs and extras #Healthy #Saludable


 Hello to one and a bear hug to each,

Hola a todos y un abrazo a cada uno, 


How is your weekend with the chill in the air? Hope you all are keep warm and drink a lot of water. Remember, all we need is 15 minutes of sunshine without any sunblock. Stay safe. This is a long weekend for us and we have to find a number of activities for the kids to keep busy. Even though it was chilly, we had to go bike riding around the block. What did you do?

¿Cómo es tu fin de semana con el frío en el aire? Espero que todos ustedes se mantenga caliente y beban mucha agua. Recuerde, todo lo que necesitamos es 15 minutos al sol sin protección solar. Mantenerse seguro. Este es un largo fin de semana para nosotros y tenemos que encontrar una serie de actividades para los niños para mantenerlos ocupados. A pesar de que hace frío, tuvimos que ir a andar en bicicleta alrededor de la cuadra. ¿Qué hicieron? 

Well, today my little one made their menu and this is what we had for lunch after much discussion. I sure hope you enjoy as much as we did!

Pues bien, hoy mi pequeña hizo su menú y esto es lo que tenemos para comer después de mucho debate. Espero que disfrutes tanto como nosotros lo hicimos! 





We had vegetable rice and fried egg and a small salad.

Teníamos arroz vegetal y huevo frito y una pequeña ensalada.

One of the young chef did the fried egg while I made the salad.

Uno de la joven chef hizo el huevo frito mientras hice la ensalada .

Salad

1 head lettuce Sliced or as desired
2 large tomatoes sliced in quarters
1 small onions  thinly sliced
1/2 cup olive oil
2 lemon juice
salt and pepper to taste

Method
Mix all vegetables together. Mix the olive oil and lemon juice and season with spices of your choice. Add to vegetables and mix to taste. Enjoy!




Ensalada
 

1 lechuga rebanada o tan deseado 2 tomates grandes cortados en cuartos 1 cebolla pequeña finamente rebanado 1/2 taza de aceite de olivajugo de 2 limónes Sal y pimienta al gusto
Método

Mezclar todas las verduras. Mezclar el aceite de oliva y zumo de limón y temporada con especias de su elección. Añadir a las verduras y mezclar al gusto. ¡ Disfrute!

      Yes, we enjoy eggs so we have to make it in different dishes and have a different taste:)

  3. I like vegetable rice particularly when paired with eggs as you did. I have the combo at the Chinese restaurant every time I go there.

    1. Yes, Petro, the chinese like to have eggs in their fried rice. Sometimes I do it like that but not this time as I had help:)

  6. ¡La comida se ve expectacular! A mi me encanta comer un huevo frito con arroz también. Pero en general hago una menestra de lenteja para acompañarlo. Y no se puede faltar el aguacate tampoco. Nunca he pensado hacer con arroz relleno en vez de eso. ¡Hay que probar!
