Red curry shrimp and coconut rice #Healthy #Saludable #Delicious

It has been a busy and chilly weekend.  It was also a not so great weekend as I need another car. My car does not work if it is cold anything below 60 degrees. My day starts after midday since the sun is warm and heats up the car. I guess that is safe. Crazy. So that is when I get to go out to do any grocery shopping or library.

Ha sido una semana ajetreada y frío. Tampoco fue una gran fin de semana, ya que mi cochecito me esta diciendo que no puede más. Mi coche no funciona si es frío nada por debajo de 60 grados. Mi día comienza después del mediodía desde cuando el sol se calienta el coche. Supongo que eso es seguro. Una locura. Por lo que es cuando puedo empezar el día y a hacer compras al supermercado o a la biblioteca. 

Last night, I decided a bit too late to move the car from the visitor parking and it had to stay there.  Well, it did not not start so I sure will be having a late start tomorrow. But I will not complain as there will be sunshine and it will be warm. Well, it sure changes plans for me and at least I have a car to go where I want to go. Do I need another car, sure but good things will come. I am praying it is in a couple days. All things happen for a reason.

Ayer por la noche, decidí un poco demasiado tarde para mover el coche del estacionamiento de visitantes. Bueno, pues no arranca así que estoy seguro de que será una mañana más tarde. Pero yo no me quejo, habrá sol y se calientito. Bueno, lo cierto es que cambia los planes para mí y por lo menos tengo un coche para ir a donde quiero ir. ¿Necesito otro coche, seguro, pero las cosas buenas van a venir. ESTOY orando que cambien en un par de días. Todas las cosas suceden por una razón. 

So, today I will make a nice warm and tasty curry to keep the stomach warm and feel the warmth and not the chill. Really in the sun, it is awesome. Actually, it is great weather to go to the park and let the children release their dose of energy.

Por lo tanto, hoy voy a hacer un lindo y sabroso curry a mantener el estómago caliente y sentir el calor y el frío no. Realmente en el sol, es impresionante. En realidad, es buen tiempo para ir al parque para que los niños suelte su dosis de energía.

Well, while daddy was at the park, I did my dinner for the family. Yes, and dinner was server after they had a nice shower and tidy. Here is my version of Red Curry with coconut rice. Yummy!

Bueno, mientras papá estaba en el parque, hice mi cena para la familia. Sí, y la cena fue servido después  de que se bañaron y ordenados. Aquí está mi versión de Curry rojo y arroz con coco. Yummy!



Ingredients

2 tablespoons oil
1/2 cup chopped shallots/onion
1 large red bell pepper, cut into strips
2 medium carrots, trimmed and shredded
2 teaspoons minced garlic
3 tablespoons Thai Red Curry Paste, recipe follows
2 tablespoons fish sauce
2 teaspoons light brown sugar
1 (14-ounce) can coconut milk
1 pound medium shrimp, peeled and deveined
3 tablespoons chopped basil leaves
Cooked jasmine rice.
 Directions

In a large saute pan, heat the oil over medium-high heat. Next, add the shallots, bell peppers, carrots, and garlic, and stir-fry until soft, 2 to 3 minutes. Add the curry paste and cook, stirring, until fragrant, 30 seconds to 1 minute. Stirring, add the fish sauce and sugar, then add the coconut milk and bring to a boil, this is optional as some people cannot or do not like coconut although this gives it flavor. Simmer until thickened slightly for about 2 minutes. Add the shrimp and cook, stirring, until pink and just cooked through, about 2 minutes. Ingredientes

2 cucharadas de aceite
1/2 taza de chalotes/cebolla
1  pimiento rojo grande, cortado en tiras
2 zanahorias medianas, cortadas y rallado
2 cucharaditas de ajo picado
3 cucharadas de la pasta de Curry rojo tailandés,
2 cucharadas de salsa de pescado
2 cucharaditas de azúcar moreno ligero
una lata leche de coco (14 onzas)
1 libra camarones medianos, pelados y desvenados
3 cucharadas de hojas de albahaca picada
Arroz jazmín.

Direcciones

Saltear en una sartén grande, caliente el aceite a fuego medio-alto. A continuación, agregue la cebolla, pimientos, zanahorias, y el ajo y saltear hasta que estén blandos por unos 2 a 3 minutos. Agrega la pasta de curry y cocine, revolviendo, hasta que huele su fragancia, aproximadamente un minuto. Remove, añad la salsa de pescado y el azúcar, luego agregar la leche de coco y deje que el agua hierva, esto es opcional ya que algunas personas no pueden o no como el coco a pesar de que este le da sabor. Cocine a fuego lento hasta que esté espesa un poco durante unos 2 minutos. Añade las gambas y cocine, revolviendo, hasta que tomen un color rosa y cocido, a unos 2 minutos.




I use coconut oil or milk in my rice instead of adding to the curry as some people do not like coconut in their food.
