How are you all doing this year? Hope it all began on the right path and enjoying life with good health. This month we are celebrating health and we would all like to eat well after splurging in all the nice food this past weeks. I sure enjoy it all. Hope you did too.

Here I am sharing a Healthy mushroom soup with a small portion of rice as I will slowly be detoxing and cleaning the body. Did I say slowly, lol. well, I have to eat the leftovers so eating in smaller portions with a nice smoothie should be fine, I guess.  I enjoy cooking my rice with coconut oil or coconut milk. Light n Fresh Mushroom Soup

1 tbsp butter
1 cup diced carrots
12 cup thinly sliced green onions
1/4 tsp dried thyme or oregano leaves
1/4 tsp black pepper
1 pack white and/or brown mushrooms, sliced
2 cups vegetable broth
1 tsp minced garlic
1/2 tsp salt
1/2 cup white wine or water
11/2 cup lowfat milk


Method

In a large saucepan over medium-high heat, melt butter or olive oil. Add carrots, onions, garlic , salt, thyme and pepper.Saute, stirring often until onions just begin to become clear, about 5 minutes. Add mushrooms, broth, and wine; bring to a boil; cook for 1 minute. Using a spoon, remove 1 cup of the vegetables; set aside. In a blender or food processor place half of the remaining soup from the saucepan; puree until smooth; remove to bowl, repeat with remaining mixture, return entire remaining mixture to saucepan, stir in milk and reserve vegetables. Simmer until heated through, about 5 minutes.

  1. Los tomates me encantan, son primordiales en todas mis comidas. La receta que hago mas frecuente es la sopa de tomates, me queda riquisima. Gracias por este fabuloso sorteo.

      Como estas? De acuerdo que a mi me encanta los tomates en todo! Ay me encanta el pollo en salsa de tomate. Estos salsa tiene un poquito de chile, sabroso!

  5. los tomates nunca faltan en mi cocina :) los uso para todo pero en donde mas me encantan es en una salsa de tomates con chiles de árbol rojos y tomatillos, también me gusta hacer mi propia salsa para el Spaguetti con mis tomates

  7. Como buena mexicana, los tomates o conocidos como jitomates alla, es el vegetal que mas utilizo a la hora de preparar los alimentos en casa. A mi me encanta en el guacamole, en un huevito revuelto a la mexicana, en molletes, para un caldito de pollo, una sopa aguada. En fin, es el alimento numero uno en casa!
