Weekend Feast!

Espero que se encuentren bien de salud en union de la familia!!!!
Pues, es fin de semana y estoy cansada, espero que estes descansando y gozando de la vida!

Tengo que descansar para tener energia el lunes primer dia de la escuela.
Eso quiere decir que hay que madrugar, nada agradable para me.

I  hope everyone is well and in union of the family.
Well, it is weekend and I am tired, I hope you are resting and enjoying life!

I have to rest and hope I have energy on Monday- the first day of school.
That means I have to be awake early, the is nothing nice for me.

Today we are having a nice meal, Baked chicken, fries and vegetable salad.

Ingredients:

1 pk chicken (leg and thighs)
1sml onion sliced
1/2 tbsp green pepper diced
1 glove garlice diced
2 lemons (lemon juice) or Apple cider vinegar
1/2 tsp or pinch of recado (anatto)
a stem or two of culantro (Sedano is the only place I can get this)

Method:

I wash and clean chicken with lemon. I place the chicken in a bowl with onions, pepper, garlic , recado and lemon juice for an hour or so to blend the flavors. If you can do this for overnight the taste great - this is a secret. Most of my fellow Belizeans do this! Let me hear you my people!
Put the oven at 320-340 degress. Turn the chicken once to get both side bake well.



Fries:

1 lb potatoes sliced or cut in wedges
oil

Method:

Today, I actually did fries on the stovetop. I would also boil for 10 minutes and then cut into wedges or thinly sliceed and pour some olive oil over the potatoes and put in the oven to bake. This comes out really nice as well. This is much more convenient as it leave me time to do other things while it is baked.

Salad:

1 lettuce washed and shredded (your choice)
1 big tomato, Sliced
1 onion sliced (optional)
Croutons
Sliced almonds or sunflower seeds

Method:

I washed and break the lettuce in pieces, add the sliced tomatoes, sliced onions. I mix my olive oil, lemon juice and salt to taste. Add the dresing to the salad, then add the sunflower seed . Finally the croutons and some goat cheese.
